Nothing breaks and no call gets dropped. Overage is billed at cost, and you'll see usage in Settings → Usage before it becomes a surprise.

Any time, from Settings → Subscription. Changes take effect immediately and billing is prorated by Stripe. There are no contracts.

Your call transcripts, recordings and customer records belong to you and are never shared with other businesses on Ansabel.
